Needed ingredients to cook Biriyani.
For Veggie Marinate:
Curd - 1/2 cup | Sliced Green chili - 3 | Red chili Powder - 1 tsp |
Chopped mint leaves-1/2 cup | Biryani masala - 2-3 tbsp | Mix cubed Veggies -1 cup |
Cumin Seeds - 1 tsp | Cubed paneer-1/2 cup | Salt-to your taste |
Fried onion sliced/birista-1/4 cup |
For Rice:
Water - 6-7 cup | Salt - 1 tbsp | Lemon Juice - 1 tsp |
Oil - 1 tbsp | Basmati Rice - 1 1/2 cup (soaked for 30 mins) |
For Assembling:
Ghee - 4 tbsp | Cashew Nuts - 3 tbsp | Cloves - 4 pods |
Ginger Garlic Paste - 2 tbsp | Curd - 1/2 cup | Cinnamon - 1 inch leaves- for garnishing |
Cumin Seeds - 2 tsp | Green Cardamom - 4 nos | Saffron - 1 pinch (soaked in 2 tbsp hot water) |
Fried Onion Sliced/Barista 1/2 cup | Water - 1/4 cup | Mint leaves and coriander |
How to cook rice for Biriyani
Cook soaked rice with water, salt, Oil and lemon juice for 5 minutes (till more than half cooked)
Drain water completely with help of strainer and keep aside.
How to Marinate
In a large bowl combine all the ingredients of marination And mix well and keep aside for 20 minutes.
How to assemble Biriyani
Heat a ghee In a heavy bottom large pan and add cumin seeds, cashew nuts, green cardamom, clove, cinnamon and saute for a while on low heat.
Add ginger garlic paste, fried onion, curd and water and cook for 1 minute on low heat.
Add the marinated ingredients and mix well.
Add half cook rice and soaked saffron and cover pan with lid and cook till rice cooked well.
Mix well with flat Steel spatula.
Garnish with fresh chopped mint leaves and coriander leaves.
